Make the menu unique and interesting; it should reflect your personality and your style. Do remember that the menu will take up the biggest chunk of your budget.

If you are working on a tight budget, I would suggest that you start with your menu budget, then your invitations and work backwards.

People will forget what your wedding dress looked like, but they will never forget how hungry they felt at your wedding.
Finding the right caterer might take some time but it will be worth it at the end of the day.
